I’m a 34-year-old guy living in Austin, Texas. My kitchen is small, sunlit, and usually smells like toasted spices or slightly-too-charred garlic. I didn’t grow up with fancy culinary dreams. I grew up in a busy, working household where dinner was a race against the clock.

When I hit my twenties and moved out on my own, I was hit with a reality check: cooking for one is hard. I was juggling a tight budget and a long commute, only to find recipes that required twenty ingredients and left me with enough leftovers to feed a small army for a week. I got tired of “single-person tax” in the kitchen.
So, I started experimenting. I never went to culinary school; I learned in the trenches. I’ve burned more pans than I’d like to admit and once turned a chicken breast into something legally classified as “industrial rubber.” But every disaster taught me how to scale things down, how to leverage pantry staples, and how to make a meal feel intentional—even if it’s just me and a podcast at the table.
